Sauteed Sweet Potatoes


I seriously love sweet potatoes.  They are seriously good, and good for you! I came up with this recipe while on a diet because I really really missed the traditional Russian/Ukrainian dish of fried potatoes where we normally use white potatoes and fry them in a skillet with a bunch of oil.  This is a much healthier version of that, and it satisfied my cravings! Sprinkle some fresh chives over these babies and you have yourself a nutritious and delicious side dish.


4 tablespoons grape seed oil
4 large sweet potatoes
Small bunch of chives
1. Peel the sweet potatoes. Then using the mandolin slicer (setting 1) slice the potatoes into very thin circles. I
highly recommend using this method because you will get evenly thin circles, and it takes just a few minutes to
effortlessly slice up your potatoes. But use caution- I have seen and heard plenty of slicing-gone-wrong

2. Heat 4 tablespoons of grape seed oil in a skillet on medium high. If you don’t have grape seed oil on hand, any
other light flavored oil will work. Place the sliced circles of sweet potatoes into the skillet. If you have too many
slices stuck together, just separate quickly with your fingers to ensure thorough cooking. Saute the potatoes on
medium high heat for 10 minutes, mixing every few minutes.

3. Then add salt to taste, reduce heat to medium low, and continue sauteing for an additional 10 minutes,
continuing to mix every couple of minutes until potatoes are soft. Don’t cover the skillet, this will cause potatoes
to steam and this will alter the taste of the final dish.

4. Chop some chives and sprinkle over the cooked sweet potatoes.
